This cocktail seems to be created in the late 19th century, and both Peru and Chile claim to be its inventor. One thing is certain: it is the world’s most popular non-French cocktail based around Brandy (Cognac or Armagnac).

Ingredients

    5cl pisco
    2cl lime juice
    1.5cl 1883 Cane Sugar syrup
    2cl egg white
    2 dashes Angostura bitters

preparation

    Pour all ingredients, except the bitters, in a shaker.
    Fill with ice and shake vigorously for 10 seconds.
    Strain into a martini glass and place the dashes of bitters on the foam created by the egg white.
    You can also draw patterns with the bitters marks, using a toothpick.
