Pour all the ingredients in a small shaker tin. Proceed to a dry shake (without ice) to emulsify egg white. Fill of ice. Shake hard for 10 seconds. Strain in a chilled Martini glass. Garnish with a grapefruit peel and some Aromatic bitters.
