An attractive twist on the famous Julep, with the archetypal French Brandy: the Cognac - heightened by the the passion fruit's sour edge.
Put the mint and puree in a Julep cup, muddle slightly, then fill with crushed ice and add the Cognac. Stir with a mixing spoon to get a consistent texture, top up with ice, and finish with the dashes of bitters.
Decorate with half a passion fruit, a liquorice stick and a mint sprig.
