Green Beast is a Punch made with Absinthe, cucumbers and lemon. It was elected Best Cocktail in the 2010 NYC Food & Wine Festival and Best Absinthe Cocktail in the 2011 Ultimate Cocktail Challenge. In this recipe, the syrup replaces ideally the cucumber and sugar.
Pour the cucumber syrup and lemon juice in a small Absinthe fountain filled with ice. Top up with cold water and add two lemon slices. Place a white sugar lump on an Absinthe spoon, which is placed on an Absinthe glass. Pour the Absinthe on the sugar lump and through the spoon, then set alight. Open the tap and let the mixture flow until the sugar lump dissolves.
