In 1883, a gifted herbalist named Philibert Routin artfully blended 24 plants and spices from the French Alps. His first recipe, the Vermouth from Chambery, marked the start of the Maison Routin story. Today, our 1883 syrups brand imparts a French touch in bars and coffee shops worldwide. 1883 is renowned for the diversity of its range, and for the intensity and creativity of its flavours – in London, Seattle, Sydney, Seoul, São Paulo, Dubai and Cape Town.

In setting up LAB83 Drink Designer Academy, we wish to perpetuate our founder's creativity and also assist you through a new service. This school is completely dedicated to you – professional bartenders and baristas, plus customers and friends of 1883. You are the heartbeat of our innovation, so we have designed it as space for training, creating, and sharing ideas. It is a special address for refining your technical mastery as well as stimulating your imagination and talent. Welcome!

THE AVAILABLE TRAININGS

We offer you training modules that range from introductory to advanced. Our trainers have developed suitable teaching methods based on confidence, hands-on practice, and discussion. Their objective? Transmit excellence by providing the setting for your creative fulfilment.

At the start of each session: 1883 tasting, 20 min: analysis and tasting of selected flavours in the 1883 range, from classics to the most original innovations, to familiarise yourself with our products.

At the end of each session: Cocktail demonstration, 20 min: demonstration of several drinks adapted to the training level, and personalised to meet participants' expectations.

BEGINNER - 2H30

Session intended for coffee newcomers,
no knowledge required.

  • Initiation to the coffee world (history, origins, varieties)
  • Basic rules to make a good coffee (grind, grammage, temperature, adjustments)
  • The various types of hot drinks
  • Initiation to milk frothing
  • Making a cappuccino and a decorative sauce

ADVANCED - 3H30

Session intended for professionals
or hobbyists having already
a coffee-culture and barista basics.

  • Coffee (history, origins, varieties, harvesting, storage, roasting)
  • Reminder of basic rules for making a good coffee, and the various types of drinks
  • Milk (type and applications)
  • Making a flavoured cappuccino
  • Making a flavoured macchiato

ULTIMATE - 4H00

Session intended for professionals
who already have a solid grounding
in the coffee and barista world.
